Stamped, Forged or Laminated

The process of making knife blades is mostly based on three techniques, stamping, forging and laminating blades. This basically means how the blade is produced.

But how does this help you in deciding what to buy?

Stamped Chef Knife Blade

Generally a stamped blade will be cheaper than a forged or laminated blade because of the less labor intensive process of production. At the same time stamped blades will be of a lower quality than the latter. Imagine a huge sheet of metal from which a cookie cutter shapes out blades with the same thickness throughout. The blades are then grind and sharpened. So you’ll get a cheaper, lighter, lower quality knife for your money.

Forged Chef Knife Blade

On the other hand, forged blades are more expensive as the production process is more labour intensive. The blades are made by continuously beating a chunk of metal into shape by hand and machine. Thus a heavier, stronger, long lasting knife blade will be produced. Also, the spine of the knife will be thicker and it will get thinner towards the edge. In this case you’ll get a more expensive but high quality, long lasting knife. In a few words, value for cash.

Laminated Chef Knife Blade

Laminated blades are basically layered sheets of different strengths of steel. A high carbon core is sandwiched between a softer steel that gives the blade strength, flexibility and the possibility of creating a sharper edge that will last longer. At the same time, grinding or sharpening will be much easier. Because 80% of what you grind is softer steel, the sharpening process will take no time. Also, because the core is made up of a hard steel the edge you create will be sharper and hold for longer. Generally you find that Japanese knives have laminated blades, thus thinner blades with a sharper edge angle. A lot of care is put into producing laminated blades so they will mostly be made by hand. This means the laminated blades will be the most expensive. Basically you get a long lasting, high quality but expensive blade.

So now, what’s the best chef knife blade production type?

Stamped, Forged or Laminated?

Stamped Forged Laminated
Price low medium high
Quality low high high
Weight light heavy light

Because the best chef knife you pick will be the most used tool in your cooking endeavors you should first pick a higher quality blade. So do not pick the cheapest or you will face disappointment later in the kitchen. Also, do not pick a pretentious, high priced blade as a laminated Japanese knife for your first knife. Japanese knives need a certain amount of care and you’re not interested in constantly maintaining your blade. A laminated blade will be thinner and thus prone to nicks if used on harder ingredient like small bones.

We believe that a high quality forged knife is perfect for a beginner chef. The blade will last you a lifetime if minimal care is applied. Just use a steel for a couple of minutes before use and wipe it after washing. That is all you need to do in order to maintain the tool that will certainly be used most in your daily cutting, chopping or slicing.

So let’s recap what are the most important advantages for  beginner in the production of a knife blade:

1  A forged or laminated blade required for a long lasting knife.

2  A thicker blade required so it’s not prone to nicks.

3 A heavier blade so that less effort is needed when cutting.

Chef Knife Blade Types

What is the best material for your knife blade?

There are three major types of materials used in the production of knives and you should apply this knowledge to choose the best chef knife for you.

1. Carbon steel

Carbon steel is an alloy between iron and a concentration of carbon ranged between 0.12–2.0%. Usually a high grade chef’s knife blade contains around 1% carbon in order to achieve a long lasting, sharp edge.

But what does this mean?

Basically more carbon, less sharpening needed. At the same time carbon steel blades are easy to sharpen and hold the edge for an extended period of time. The only issue is that a high level of care is needed as carbon steel can rust and stain. With a carbon steel knife you have to properly clean and lubricate the blade. If used excessively some chefs rest their knives for 24 hours in order for the patina to be restored and thus no metallic color infuses from the knife to the ingredients.

2. Stainless Steel

A stainless steel blade is easy to maintain but not as sharp as carbon steel. It is resistant to rust, stains and corrosion but looses sharpness much easier. Top quality stainless steel blades are produced in Japan with sharpness equivalent or even higher to carbon steel but at a high cost. A stainless steel knife is recommended for a less experienced chef as it requires less care.

3. Ceramic Blades

Ceramic blades hold sharpness the most but chip easily and are prone to breaking if dropped on a hard surface. As they are made from ceramic, chemical reaction between the blade and ingredients doesn’t take place. In this case ceramic blades are very good for cutting vegetables and fruit.

So which blade makes the best chef knife for you?

The material used in the blade has a number of advantages and disadvantages.

  • Carbon steel holds an edge for longer and sharpens easily but high care is needed to maintain the knife.
  • Stainless steel doesn’t hold an edge for too long but is resistant to rust, stains and corrosion.
  • A ceramic blade holds the edge for the longest period of time and does not chemically react to any ingredients but it is most prone to breaking or nicks.
Carbon steel Stainless steel Ceramic
holds edge high low high
chemical resistance low high high
blade strength high medium low

Our suggestion is that a beginner cook should try a stainless steel knife as it is easier to maintain. But in this case you lack the advantages of a long lasting edge. So why not get the best of both worlds ? High carbon stainless steel knives can be found on the market. For example we use a Zwilling Pro line knife that is a forged high carbon, stainless steel knife. other companies produce blades out of the same materials which we think are best for you.

European vs Japanese Chef Knives

Edge Angle; 20-22° vs. 15-18°

Because of its sharpness and lightweight, the Japanese chef’s knife has increased its popularity between western chefs. To achieve such a sharp, thin and lightweight knife the hardness of the steel used is essential. Sometimes reaching values of over 60 HRC the steel permits for a sharper edge angle than European knives. Ranging between 15-18° compared to 20-22° the higher sharpness blade is optimal for vegetable cutting, dicing and slicing.

So European and Japanese knives are pretty different in their physical characteristics and process of production. The best chef knife for you is the one that feels best in your hand and matches the characteristics of your cooking style.

Basically the characteristics of the best chef knife for you in the two different styles are determined by the structure of the knife.

European

  • Have a raised handle in order for your knuckles to avoid touching the cutting surface
  • Generally made of hard steel, hot-forged or stamped, thicker and heavier than Japanese knives
  • Between the blade and the handle, a European knife has a bolster that adds weight for better balance
  • A quality knife blade will extends into the handle

Because of these characteristics the European chefs knife is suitable for cutting all foods. As it’s thicker and has added weight, it is also good at chopping tougher ingredients and small bones.

Japanese

  • A thinner blade so it’s prone to nicks.
  • Made of hard steel but lighter weight overall.
  • Doesn’t have a bolster. In this case the wider end of the blade comes to a sharp edge.

Japanese style chef knives have a thinner blade and are lighter. Because of this, the knives are very good at cutting vegetables. Avoid cutting hard ingredients to prevent getting nicks in your blade’s edge.

So what style is best for you?

There is no straight answer here. Basically what feels best in your hand is the knife for you. A European knife tends to be heavier and the added bolster will give you a sense of security when using it.

A Japanese knife is a bit more pretentious because of the sharper edge so it has to be handled with a bit of knowledge and care. In this case we suggest a European style knife for beginners and a Japanese knife for cooks with some experience.

Are there other details I should look out for when buying the best chef knife ?

1. Handles are made out of wood, steel or composite materials. In general a high-grade finish to the handle is an indicator of a quality knife.

2. Size should be taken into account as chef’s knives vary from 12 to 6 inch. A longer knife is most used in professional kitchens and a shorter one is most probably best for beginners.

3. Budget should not be your biggest worry as your chef’s knife will be the most used item in your kitchen.

We have now covered the buildup of a knife. From the different production methods to the materials used and the characteristics of the two basic styles.
