The production of the paring knife features advanced German engineering mixed with traditional Japanese techniques to create a perfect blade. The Birchwood SG2 line is made out of a patented special steel, hardened through the Zwilling CRYODUR process and sharpened through the traditional Japanese “Honbazuke” technique.
Birchwood Paring Knife Blade
The paring knives MC63 powdered steel core is patented and used specially for this line of knives. The steel core is covered in 101 layers of softer and harder steel that give the blade its original flower pattern. The material used doesn’t only make the blade beautiful but also gives it an increased hardness while still being flexible.
The Miyabi SG2 paring knife is hardened using the CRYODUR technique. This results in a blade’s edge hardened at 63 HRC (Rockwell). A blade edge at 63 Rockwell ca be considered as one of the hardest edges you will find on a blade. Through the CRYODUR process, a blade is heated up to a very specific temperature in a vacuum sealed oven. After, it is slowly cooled down at room temperature before it frozen at -321 Fahrenheit (-196 celsius). This process ensures that the blade reaches the intended hardness while still being flexible.
