The blades are hardened using the Zwilling patented CRYODUR process through which the steel of the knives is heated in specially designed ovens. Then it is chilled at room temperature before it is frozen at -196 degrees celsius (-384 degree Fahrenheit). This process ensures you receive a blade that has a hardness of 60 on the rockwell scale.
