Miyabi Morimoto Knives Red 600S Line Features
The very well known, international chef, Morimoto has collaborated with the Zwilling J.A. Henckels Miyabi brand in order to create a personalized line of knives that that mixes Western styles with Japanese. The MIYABI Red 600S Morimoto Edition blends the traditional sharpness of Japanese blades with the comfortable and easy to care for Western style knives.
The steel used in the construction of the blades is the classic Zwilling Special, high-carbon German stainless steel that is specifically produced for Henckels. The special steel is a very well balanced mixture of chrome and carbon made for extended edge retention and corrosion resistance. The hardening process of the MIYABI Red 600S Morimoto Edition blades is done through the Zwilling patented FRIODUR technology which is done through ice hardening of the blades. This ensures that the blades are extra hard, have a great edge retention and are flexible. At a 57 on the Rockwell scale you can be sure your knives will stay hard for a long time.
