Miyabi Artisan Line Features
Being one of the most beautiful of the Miyabi product lines, it mixes exceptional design with professional craftsmanship. The material used in the knives blades is a top of the line micro-carbide SG2 core which is encased in a nickel and stainless steel cover for an exceptional cutting performance. The blade steel is hardened through the Zwilling J.A. Henckels CRYODUR process through which the blade becomes extremely hard, corrosion resistant but still flexible. First the blade is heated in specially designed ovens, then cooled to a room temperature before it is almost frozen at -384 degree Fahrenheit (-196 celsius). This process ensures the blades reach a very high 63 on the Rockwell scale.
The hammered pattern on the knives blade, called a “Tsuchime” finish, not only enhances the beauty of the blade but also helps create small pockets of air which don’t let your food stick to the blade. When compared to the Miyabi Birchwood the blade is thicker and is a bit taller thus making it slightly heavier. But this shouldn’t be an issue as the knife is perfectly balanced and cuts through food like through butter. Also a heavier knife is sometimes welcomed because you use less effort to push the blade through your ingredient being it fruit or meat.
All knives are made in Seki Japan, the capital of Japanese knife craftsmanship with german precision combined with Japanese traditional techniques. Each knife is hand honed in order to produce a exceptional cutting edge using Japanese sharpening techniques. The method used is known as the “Honbazuke” method through which the blades are sharpened in a 3 stage process. Everything is done by hand. First the knife is coarsely ground into shape using a rotating sharpening stone. Second, the blade’s edge is honed using a fine rotating stone. And third, it is polished using a leather stropping block. This process ensures you end up with a knife sharp as a scalpel.
The handle is made of Rosewood Pakkawood, which is highly praised in Japanese knives handles. The wood is processed and impregnated with resin thus creating a long lasting handle. It is ergonomically designed in order to feel extremely comfortable in your hand. Also the Handle has striking decorative accents and a stainless steel end cap which increases its beauty and because of its weight helps balance out the knife to a perfect proportion. After the bolste and before the endcap the handle features brass plus red spacers and also features a very attractive mosaic pin in the middle.
