A slicing knife or a carving knife is always needed between your kitchen tools. The chef knife, paring knife, bread knife and slicing knife are all basic knives you need in all your cooking endeavors. These 4 knives can not be replaced with others most of the time you are cooking a dish. You will use a paring knife for peeling vegetables easier than any other knife. The same goes for chopping with a chef knife, slicing ingredients with hard exterior and soft interior with a bread knife or slicing the perfect slice with a thin and long slicer. Thus if you do not own a slicer, the Kaizen slicing knife is a excellent tool between your kitchen knives.

Kaizen Slicing Knife Blade

The Miyabi Kaizen slicing knife is made through traditional Japanese knife making techniques mixed with high end German engineering. Thus, the knives are made with a VG10 steel core that is very popular with modern Japanese knives, and hardened through Zwilling’s registered CRYODUR process. The VG10 core is basically high carbon stainless steel which is heated up in vacuum sealed ovens, then frozen at -196 Celsius in order to reach a hardness of 60 HRC.

The blade’s hard edge obviously makes for a high edge retention. But in order to get a truly exceptional knife, the blades are hand sharpened through the traditional 3 step, Honbazuke technique. The edges are first ground to shape before being sharpened on horizontally rotating stones. Finally the blade’s edge is polished on leather belts in order to achieve the scalpel like edge. Thus, Miyabi Kaizen knives come very sharp out of the box.

Kaizen Slicing Knife Handle

The handle of the Kaizen slicing knives is made out of linen micarta. The micarta is actually a fiber composite made by applying pressure and heat in order to fuse the layers of material. In this case linen is used in order to achieve a smoother finish to the touch. The micarta is a very sturdy material that stands up to damage and does not react with water. Just perfect for a knife handle!

The Kaizen slicing knife comes with a manufacturer lifetime warranty.
